Waffles and fried chicken are a delicacy back during the flappers’ time and after slavery for African-Americans. Fried chicken became so hard to come by that on Sundays when they ate it, it became a tradition. It’s soul food here in Los Angeles.
I’d love to learn more about this history!

The cone had two cone-holes. Being the ice cream lover I am, I had to try that unique cone. It was made for me. Single scoop of mint chocolate chip and coconut macadamia nut ice cream that looked like double scoops. I’ll tell yah that I was super full and fell asleep right after.

MHT in San Jose won an Honorable Mention from First Lady Michelle Obama's Let's Move Video Challenge

My professor Dr. Freedman created this wonderful program at Most Holy Trinity Church last summer (My school should be so proud of it). It incorporates two of the main tools that highlight the importance of being healthy: physical activity and healthy eating.

I’m so happy that she has won an honorable mention from this challenge. It is a blessing to work for her and have been taught by her. There’s always good work happening in every corner!

S’more fun
On the last day of teaching and being a counselor, we had smores. It’s not certain where the origin came from, but it can trace as far back when the girl scouts first had it in its “recipe book.” They made it during campfires which is the reason why today, most camp outs will have this famous s’more treat
2 squares, 2 blocks of hershey chocolate bar, and one marshmallow = 20g of carbohydrate.

Pirate’s snack boat


When I think of pirates, I think of scurvy. Scurvy was popular on the 7 seas and it was because they didn’t eat their fruits and veggies so no vitamin C. With the kids at diabetes camp, I did a boat balance with them. This boat had the food groups and together was 15g carbohydrates.

The chex represented “wood,” baby carrots were the “pirate pegs,” cheese was the “plank,” the grapes were the “cannonballs,” and the sunflower butter was the “ocean.” It was very interesting what the kids did with those items. One kid spread the butter on the bottom of the boat and then glued on the chex to make the deck! He used the string cheese to make a flag. It was so adorable and so cute.

Worm is dirt cup - Mad Scientist Day


Instant pudding only solidifies with milk. If you plan on using any other liquid, you can either mix it with milk or add casein protein. In this experiment, the instant pudding didn’t solidify with neither soy milk or coconut milk. It did with lactaid and regular milk. Turns out that casein and calcium together interacts with an ingredient that is found in the instant pudding to solidify.

One instant pudding package uses 2 cups of liquid. Mix it together until well blended. Let it sit for about 5 minutes to solidify. Scoop out about 3 oz. of the pudding. Add in one crushed oreo and one worm. This individual cup is about 15g of carbohydrates.
